My Journey

Hi, My name is Esther Suarez. I am a Food For Life Instructor representing the Physicians Committee for Responsible Medicine- PCRM.org

My plant rich story begins with my mother Aida Suarez. My mother, like so many, devoted nearly all of her life to her children. When illness struck in her early 30’s she became a vegetarian and, before long, a vegan. Being raised on a Caribbean diet, it was easy for her to make the change to a whole food vegan diet, since much of that cooking style is based on plant-rich food.

My mother, an avid reader, read lots of books on plant-based nutrition, and healed herself naturally. This paved the path for her children.

Like many children, I listened to my mother…sometimes. I became vegetarian in my teens then flip-flopped and regressed to meat eating as a young married adult. Unhealthful eating wore me down and I became ill. After being diagnosed with anemia in my mid-30’s, I finally listened to my mother’s words of wisdom, “You’re not sick Esther, you’re toxic.” That was hard to hear, but my physical pain and her words of wisdom woke me up!

Re-adopting a whole food plant-based diet, my anemia disappeared, and decades later I continue to enjoy the blessings of very good health.

Thank you to my mother who lived medication-free for 88 years, blessing me with the knowledge and strength to thrive on plant rich food. And to the many plant-based doctors, friends and authors, and all healing plant foods. I truly feel that health is my greatest wealth.
